1. Drain the apricots and measure 50 ml of juice.
2. Place a sugar cube between each two halves of the apricots. Peel a squash, grate it and mix it with the flour, semolina, egg yolk, salt and a little nutmeg powder.
3. From the dough, form a roll, then cut into 8 parts. Put two halves of apricots connected with sugar on each side. Then form dumplings with your hands around the dough.
4. Heat plenty of water to which you have added a little salt, add the dumplings, reduce the temperature and cook for about 20 minutes. Fry the rest of the apricots in a tablespoon of butter and season with a little cinnamon sugar. Then add the apricot and apple juice and let it simmer for another 3 minutes. Melt the rest of the butter and fry the piece. Take the dumplings out of the water, drain them well and roll them in fried bread. Serve with stewed apricots and sprinkle with cinnamon sugar.
