Usually you have to make almond milk because it is not for sale. Although almond milk is uncommon today, it was often mentioned in recipes during the Middle Ages, as cow’s milk was not available at the time and spoiled quickly.
The taste of almond milk is wonderfully mild, it’s a little rarer than soy and cow’s milk, but that’s why it has a fine aroma of fresh marzipan. In the same way as almonds, it is possible to prepare milk from raw hazelnuts, raw sunflowers or raw cashews (which unfortunately are not sold in our country). Almond milk will last in the refrigerator for 2 days.
Rinse well and soak raw almonds overnight, or for a few hours. Sprinkle with soaked water and add 3 times more clean water (spring or filtered). When making almond milk, you can also sauté the butter, but it will be tastier if you let the almonds peel in water before grinding. In addition to this, soaking begins the process of germination of almonds, creating very useful enzymes.
